Perfect Christmas Roast Turkey

8 easy steps to the perfect roasted turkey

Roasting the turkey is a horror that families have to face every year at Christmas … and for much of North America at Thanksgiving too!

I believe that Turkey roasting is not really that much of a deal and much of the horror has been passed down from elaborated stories. Just follow these simple instructions and you will never worry about getting a perfectly roasted turkey again.

I always advise that you buy high grade good quality organic turkey for the best flavor and cooking. Battery farmed turkeys may be mostly water, too much fat and the poor birds have had an awful life!

1. Take the turkey out of the freezer or refrigerator, making sure you give it time to thaw and warm to room temperature. This could take many hours!

2. Get a large roasting pan and make sure the turkey has plenty of room so that the juices can come out and freely move around. Lay the turkey on top of the giblets and neck to stop it from sticking on the bottom.

3. This is not essential but tying the legs together can make the turkey look much neater and more appropriate for serving.

4. It’s recommended that the oven is preheated to a temperature of around 375 degrees farenheight.

5. Get a large piece of triple thickness aluminium baking foil that is just slightly larger than the breast but not covering anything else. Cover one side with butter and stick onto the turkey using the butter to adhere.

6. Now onto the roasting…. After approximately an hour the thighs will be well browned. This is a good time to remove the foil. Use an instant temperature thermometer to read the temperature between the thigh and breast. The temperature should be below 100 degrees farenheight. If it isn’t then raise to 425 degrees farenheight.

7. Now the finish up. Keep roasting, checking periodically until the temp between the breast and thigh reads between 145-150 degrees farenheight. The turkey can then be removed from the oven.

8. Cover the turkey very loosely with foil. This needs to sit in a warm place for 20-30 minutes, at least, before serving and carving.
